Homemade Gluten-Free Meatballs




What you'll need:


  • 1/2 Cup Ground Pork Panko (to be used in place of bread crumbs)

  • 2 Pastured eggs

  • .1/4 Cup Raw Milk or Coconut Milk/Almond Milk

  • 1/2 Cup grated Parmesan Cheese

  • Optional - 1/2 diced Yellow Onion

  • 1 Pound Grass-fed, Grass-finished Ground Beef (you can also use a ground beef/organ blend)

  • Salt

  • Pepper

  • Italian seasoning

  • Organic Sugar-Free Tomato Sauce


Directions:


  1. Pre-heat oven to 400 F.

  2. Combine Salt (to taste), Pepper (1/2 teaspoon), Italian Seasoning (1 teaspoon), Pork Panko and cheese in a mixing bowl.

  3. Whisk together 2 eggs in a separate bowl.

  4. In another bow, place the ground beef.

  5. Add the dry ingredients into the bowl with the ground beef as well as the whisked eggs.

  6. Mix well by hands.

  7. Once all ingredients are fully incorporated, mold into meatballs.

  8. Place all meatballs onto a baking sheet with parchment paper.

  9. Baked for 15-17 minutes. If you do not choose to simmer afterwards in tomato sauce, you will need to bake longer, around 20-22 minutes.

  10. Remove from the tray and simmer in tomato sauce of choice for 5-7 minutes on medium heat.

  11. I recommend choosing a tomato sauce made with extra virgin olive oil, tomatoes and seasoning. Choose a tomato sauce without any added sugar or vegetable oils. There are actually many good options at the grocery store. There are also many organ options.
