What you'll need:
A large mixing bowl.
Large mason jar.
Optional: fermentation pestle.
3-4 Organic Onions.
1/2 tbsp sea salt.
Optional: spices like Turmeric, Cumin, etc.
Directions:
Slice up onions (recommend goggles and a mandolin).
Place onions into a mixing bowl with salt and let sit for 15-30 minutes to extract water. If using spices, also add at this time.
Transfer contents into mason jars, squeezing juices out by hand or fermentation pestle.
If the brine doesn't fully submerge the onions, add water so that they are fully submerged.
Ferment 10-14 days and if you aren't using an airlock lid, you must open the jars daily to prevent exploding glass jars.
